1/2 cup cream cheese softened

1/4 cup pumpkin puree

1/2 cup powdered sugar

1/2 teaspoon pumpkin pie spice

1/4 teaspoon vanilla extract


Instructions

  • Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  • In a bowl, sift together the powdered sugar and almond flour.
  • In a separate bowl, beat the egg whites until frothy, then gradually add the granulated sugar and continue to beat until stiff peaks form.
  • Gently fold the dry ingredients into the meringue, along with the pumpkin pie spice and orange gel food coloring until just combined.
  • Pipe small circles onto the prepared baking sheets and let them sit for 30 minutes to form a skin.
  • Bake for 20-25 minutes, then allow to cool completely.
  • To make the filling, beat together the cream cheese, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.
  • Fill half of the macaron shells with the cream cheese filling and top with the remaining shells.
