1/2 teaspoon salt

6 Tablespoons (84g) unsalted butter

2 ounces semi-sweet chocolate

3/4 cup (150g) granulated sugar

2 large egg yolks

1 large egg

1 teaspoon espresso powder

2 Tablespoons (28ml) oil

3/4 cup (128g) semi-sweet chocolate chips

1/2 cup (113g) unsalted butter

2 cups (227g) pecans

3/4 cup (235g) light corn syrup

1/2 cup (106g) dark brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon fine sea salt

2 Tablespoons bourbon

2 teaspoons vanilla extract


Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine flour, sugar, and salt for the crust. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together.
  • Roll out the dough and fit it into a 9-inch pie pan. Prick the bottom with a fork and bake for 10 minutes. Set aside to cool.
  • For the brownie filling, melt the butter and chopped chocolate together in a saucepan over low heat. Remove from heat and stir in granulated sugar, eggs, and espresso powder until smooth. Fold in flour, cocoa powder, and salt, then mix in the oil and chocolate chips.
  • Pour the brownie batter into the pre-baked crust and bake for 15 minutes.
  • While the brownie layer is baking, prepare the pecan topping by melting 1/2 cup of butter and mixing it with pecans, corn syrup, brown sugar, cinnamon, nutmeg, sea salt, bourbon, and vanilla extract in a bowl.
  • Pour the pecan mixture over the slightly cooled brownie layer and return the pie to the oven. Bake for an additional 15-20 minutes, until the pecan topping is set.
  • Allow the pie to cool before slicing and serving.

Notes
