2 sticks (8 ounces) unsalted butter

melted until browned

1 cup dark brown sugar

packed

1/2 cup granulated sugar

1 Tablespoon vanilla extract

2 large eggs plus 1 egg yolk

at room temperature

16 pecan halves

for decoration

Instructions

  • In a skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the finely chopped pecans and toast them until fragrant, about 4-5 minutes. Remove from heat and set aside.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cornstarch, salt, cinnamon, and baking soda. Set aside.
  • In a large mixing bowl, combine the melted browned butter, dark brown sugar, and granulated sugar, mixing until smooth.
  • Add the vanilla extract and eggs (2 large eggs and 1 yolk) to the butter-sugar mixture, and whisk until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the toasted pecans.
  • Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Optionally, top each cookie with a whole pecan half.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
