Ingredients
1 and 1/4 cup pecan halves

3 tablespoons unsalted butter
2 and 1/2 cups all-purpose flour
1 tablespoons cornstarch
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
2 sticks (8 ounces) unsalted butter
melted until browned
1 cup dark brown sugar
packed
1/2 cup granulated sugar
1 Tablespoon vanilla extract
2 large eggs plus 1 egg yolk
at room temperature

Instructions
- In a skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the finely chopped pecans and toast them until fragrant, about 4-5 minutes. Remove from heat and set aside.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cornstarch, salt, cinnamon, and baking soda. Set aside.
- In a large mixing bowl, combine the melted browned butter, dark brown sugar, and granulated sugar, mixing until smooth.
- Add the vanilla extract and eggs (2 large eggs and 1 yolk) to the butter-sugar mixture, and whisk until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the toasted pecans.
- Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Optionally, top each cookie with a whole pecan half.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Ensure the butter is browned to develop a richer flavor for the cookies. Feel free to adjust the amount of pecans based on your preference.
