2 medium sweet potatoes

Instructions

  • In a large skillet over medium heat, cook the chorizo, breaking it apart, until browned and fully cooked.
  • Add diced sweet potatoes to the skillet and drizzle with olive oil. Stir to combine and cook until sweet potatoes are tender, about 10-12 minutes.
  • In a separate bowl, scramble the eggs and then add to the skillet. Cook until eggs are set.
  • Warm the tortillas in another skillet or microwave.
