1 pound chorizo sausage
casings removed
2 medium sweet potatoes
peeled and diced
1 tablespoon olive oil
6 large eggs
scrambled
8 small flour or corn tortillas
1/2 cup crumbled queso fresco or feta cheese
Fresh cilantro
chopped
Salsa for serving
Instructions
- In a large skillet over medium heat, cook the chorizo, breaking it apart, until browned and fully cooked.
- Add diced sweet potatoes to the skillet and drizzle with olive oil. Stir to combine and cook until sweet potatoes are tender, about 10-12 minutes.
- In a separate bowl, scramble the eggs and then add to the skillet. Cook until eggs are set.
- Warm the tortillas in another skillet or microwave.
- Assemble the tacos by filling each tortilla with the chorizo, sweet potato, and egg mixture. Top with crumbled cheese and chopped cilantro.
- Serve with salsa on the side.
