Ingredients

1/2 cup cold unsalted butter cut into small cubes

1/2 cup dried cranberries

Zest of 1 orange

2/3 cup heavy cream

1 large egg

1 teaspoon vanilla extract

Additional heavy cream and sugar for topping


Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold butter and mix until the mixture resembles coarse crumbs.
  • Stir in the dried cranberries and orange zest.
  • In a separate bowl, combine the heavy cream, egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Turn the dough out onto a floured surface and gently knead it a few times.
  • Pat the dough into a circle about 1-inch thick and cut into wedges.
  • Place the wedges on the prepared baking sheet and brush the tops with additional cream and sprinkle with sugar.
  • Bake for 20-25 minutes or until golden brown.
  • Allow to cool slightly before serving.

Notes

For an extra citrusy flavor, add more orange zest to the dough. These scones are best enjoyed fresh on the day they’re made.
