Ingredients
1 cup all-purpose flour
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp pumpkin pie spice blend
1 tsp ground cinnamon
1 1/4 cups granulated sugar
3 large eggs (room temperature)
1 cup canned pumpkin puree
1 tsp vanilla extract
1/4 cup powdered sugar (for dusting towel

8 oz cream cheese (room temperature for smooth mixing)
1/4 cup salted butter (softened

Instructions
- Preheat your oven to 350°F (175°C) and prepare a jelly roll pan by lining it with parchment paper.
- In a large bowl, mix together the flour, salt, baking powder, baking soda, pumpkin pie spice, and ground cinnamon.
- In another bowl, beat the eggs and granulated sugar until pale and fluffy, then add the pumpkin puree and vanilla extract, mixing until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared jelly roll pan and spread evenly, then bake in the preheated oven for about 15-20 minutes, or until a toothpick comes out clean.
- Once baked, remove from the oven and let it cool for a few minutes before transferring the cake onto a towel dusted with powdered sugar.
- While the cake cools, prepare the cream cheese filling by beating the cream cheese, softened butter, powdered sugar, ground cinnamon, and a pinch of sea salt until smooth.
- Once the cake has cooled slightly, carefully roll it up with the towel starting from one end; let it sit for about 30 minutes to set the shape.
- After setting, unroll the cake gently, spread the cream cheese filling evenly over the surface, and then roll the cake back up without the towel.
- Wrap the roll in plastic wrap and refrigerate for at least an hour before slicing to serve.
Notes
Make sure all ingredients are at room temperature for the best results. Dusting the towel with powdered sugar prevents the cake from sticking.
