Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter melted
24 ounces cream cheese softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
3 medium apples peeled and diced
2 tablespoons unsalted butter
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup granulated sugar
6 tablespoons unsalted butter cubed
1/2 cup heavy cream
1 teaspoon sea salt
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until combined.
- In a skillet, melt 2 tablespoons butter over medium heat and add diced apples. Sprinkle with brown sugar, ground cinnamon, and nutmeg, cooking until apples are softened.
- Fold the cooked apples into the cream cheese mixture and pour it over the crust in the pan.
- Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly.
- While the cheesecake cools, make the salted caramel by combining 1 cup sugar and 6 tablespoons cubed butter in a saucepan over medium heat. Stir until melted and golden.
- Slowly add the heavy cream and sea salt, stirring until smooth. Let cool slightly before drizzling over the cheesecake once it has cooled.
- Chill the cheesecake in the refrigerator for at least 4 hours before serving.
