350 g biscoff cookies

150 g unsalted butter

Instructions
- Preheat your oven to 180°C (350°F).
- For the crust, crush the Biscoff cookies into fine crumbs and mix them with the melted butter until well combined.
- Press the mixture firmly into the bottom of a springform pan and bake for 10 minutes. Remove and let cool.
- In a large mixing bowl, combine the cream cheese and granulated sugar; beat until smooth.
- Add the Greek yogurt, vanilla extract, and cinnamon; mix until fully incorporated.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the cooled crust and smooth the top.
- Bake for 25 minutes or until the center is set but slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool for an hour inside.
- While cooling, prepare the salted caramel by melting the 150 g sugar in a saucepan over medium heat until it turns amber.
- Carefully whisk in the heavy cream and butter until smooth, then stir in the salt.
- Once the cheesecake is cool, drizzle the salted caramel over the top and refrigerate for at least 4 hours or overnight.
- Slice and serve chilled, drizzled with more caramel if desired.
