Instructions

  • Preheat your oven to 180°C (350°F).
  • For the crust, crush the Biscoff cookies into fine crumbs and mix them with the melted butter until well combined.
  • Press the mixture firmly into the bottom of a springform pan and bake for 10 minutes. Remove and let cool.
  • In a large mixing bowl, combine the cream cheese and granulated sugar; beat until smooth.
  • Add the Greek yogurt, vanilla extract, and cinnamon; mix until fully incorporated.
  • Add eggs one at a time, mixing well after each addition.
  • Pour the cream cheese mixture over the cooled crust and smooth the top.
  • Bake for 25 minutes or until the center is set but slightly jiggly.
  • Turn off the oven, crack the door open, and let the cheesecake cool for an hour inside.
  • While cooling, prepare the salted caramel by melting the 150 g sugar in a saucepan over medium heat until it turns amber.
  • Carefully whisk in the heavy cream and butter until smooth, then stir in the salt.
  • Once the cheesecake is cool, drizzle the salted caramel over the top and refrigerate for at least 4 hours or overnight.
  • Slice and serve chilled, drizzled with more caramel if desired.
