Description
This spicy salmon bowl combines succulent salmon cubes with fresh vegetables, avocado, and a zesty chipotle aioli, making it a healthy and flavorful meal option.
Ingredients
2 lbs Salmon cut into 1 inch cubes
2 tbsp Avocado Oil
2 tsp Garlic Powder
2 tsp Smoked Paprika
1 tsp Cayenne Pepper
1 tsp Dried Italian Seasoning or oregano
1 tsp Salt
1/2 tsp Black Pepper
2 Avocados cut into slices
1/2 Red onion thinly sliced
1 cup Shelled Edamame
2 Persian cucumbers sliced
Cooked Brown rice or rice of choice
Fresh Lemon’s juice
Everything but a bagel seasoning or sesame seeds
Cilantro chopped
Chipotle Aioli
Instructions
- Stir together all the spices. Season the salmon generously and evenly with this seasoning blend.
- Heat up a nonstick skillet and add the avocado oil to the pan. Once the pan is hot, add the salmon pieces to the pan making sure not to overcrowd the pan.
- Cook for about 4-5 minutes each side to achieve a nice sear but making sure the salmon is also cooked through. You can cover the pan after flipping the salmon if you would like to ensure doneness.
- Once salmon is cooked, squeeze with fresh lemon juice and set to the side.
- To assemble your bowl, start with a serving of rice then top with the salmon. In addition, add the edamame, cucumber, red onions, and avocado to the bowl.
- Drizzle with chipotle aioli, fresh lemon juice, cilantro, and the sesame seasoning.
- Enjoy!
Notes
For added flavor, consider pickling the red onions before using them in the bowl. You can adjust the spice level by increasing or decreasing the cayenne pepper.
